Mixed Berry Shortcake

It was a blustery day. Wake and Bake to get my day going. Made coffee and breakfast and listened to chill hop radio on Youtube… it’s really too bad I can’t get the same vibe on Slacker Radio.

Oats, almond milk, blueberries and nut butter. Am I an adult now?

Completed Barbell Strength class and then worked on my glutes. 20 reps of 3 various leg positions on a leg press machine at 40lbs. (About 260 cals burned) My buns are feeling it today!

Cleaned out my car, took it to Havoline and spent $$$ to have all the things fixed. Was gonna mail pants to a Poshmark buyer but the UPS across the street was closed. So I walked to Kroger instead with the intention of buying a plastic envelope. No mailing supplies at Kroger. Ok.

Aimless walking around. Looked at pies. Decided to hold the calories and make a mixed berry shortcake instead. Turned out amazzziiinggg.


Binge eating and binge watching. No regrets. Gained a pound when I woke up this morning. But oh well, I still had a good time.

1 cup frozen mixed berries
1/3 cup of white sugar (next time I’m gonna use less)
Pinch of salt
1 cup water
1 can of butter biscuits
2 tbsp of fat free whipped cream
  1. Add cup of water to sauce pan. Add sugar and salt. Bring to boil (you shouldn’t see any more sugar grains)
  2. Dump in berries.
  3. Follow biscuit instructions.
  4. Stir berries to reduce. Tryna get all that liquid outta there. Took me about 10 mins.
  5. Open biscuit, spoon some berries in there, dollop of whipped cream, add pretty things for photographic purposes.
  6. Devour.
